Defoamer is a 10% silicone designed to be used in kettles while boiling. It is a fast-acting, food-grade emulsion to prevent and eliminate excess foaming. It should be added as needed, not to exceed 200 ppm per batch, as required by the FDA. A typical starting point is 1 drop in a 5-gallon batch.
